Sauces & Sweeteners

  • 0.25 cup honey or agave nectar (vegan option)
  • 2 tablespoons fresh lime juice (bottled lime juice can work)
  • 0.25 cup soy sauce (use low-sodium variant for less salt)
  • 1 tablespoon lime zest (optional if fresh limes aren’t available)
  • 1 teaspoon garlic powder (or 1 clove of fresh garlic)
  • 1 teaspoon onion powder (or finely chopped onions as substitute)

  • 2 tablespoons olive oil or avocado oil

Vegetables & Extras

  • 1 cup corn (any type: fresh, frozen, or canned)

Instructions 

  • Cook rice according to package instructions.
  • In a bowl, mix honey, lime juice, soy sauce, lime zest, garlic powder, onion powder, salt, and pepper.
  • Cook chicken in oil until browned and cooked through, then toss with the sauce mixture.
  • Warm corn and rinse black beans; assemble bowls with rice, chicken, corn, beans, and sliced avocado.
  • Garnish with cilantro and lime wedges before serving.

Notes

For extra flavor, add a squeeze of lime and fresh herbs just before serving.
