Ingredients

Protein

  • 1.5 lbs boneless skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.33 cup honey
  • Zest of 1 lime lime zest
  • 0.25 cup fresh lime juice
  • 2 cloves garlic minced
  • 1 tablespoon soy sauce
  • 0.5 teaspoon chili flakes (optional)

Carbohydrates

  • 3 cups cooked white rice or rice of choice
  • 1 cup corn kernels
  • 1 cup black beans drained and rinsed

Fats

  • 1 avocado sliced

Garnish

  • Fresh cilantro chopped cilantro (for garnish)

Instructions 

  • Marinate chicken with lime zest, lime juice, garlic, soy sauce, honey, and spices for 10 minutes.
  • Cook chicken in olive oil until browned and cooked through, about 8-10 minutes.
  • Warm the rice and prepare the corn, black beans, and sliced avocado.
  • Slice cooked chicken and assemble bowls with rice, chicken, corn, beans, and avocado. Garnish with cilantro.

Notes

For extra flavor, add a squeeze of lime before serving.
