A flavorful and easy one-pan dish combining tender chicken, fragrant rice, and a sweet-savory honey garlic sauce.

Ingredients

Chicken

  • 1.5 pounds skinless, boneless chicken thighs, cut in bite-sized pieces
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon vegetable oil

Green onions

  • 1 bunch green onions, chopped, white and pale green parts and green parts kept separate
  • 6 cloves garlic, minced
  • 1 cup long grain white rice
  • 1 teaspoon chili powder
  • 2 cups reduced-sodium chicken broth
  • 1/3 cup honey
  • 1/4 cup reduced-sodium soy sauce
  • 2 tablespoons lemon juice

Instructions 

  • Season chicken with salt and pepper. Cook in oil until browned, then set aside.
  • Sauté green parts of green onions and garlic until softened.
  • Add rice and chili powder; cook 1 minute. Pour in broth, honey, soy sauce, and lemon juice; bring to boil.
  • Return chicken to skillet, cover, and simmer until rice is tender, about 20 minutes.
  • Garnish with green parts of green onion before serving.

Notes

Use fresh green onions for best flavor.
