A flavorful and easy-to-make dish combining tender chicken, sweet honey BBQ sauce, and hearty rice for a satisfying meal.

Ingredients

Protein

  • 1 lb Boneless skinless chicken thighs (Can substitute chicken breasts)
  • 1 cup Long grain white rice (Jasmine or brown rice can be used)
  • 1 cup BBQ sauce (Choose your favorite brand)
  • 0.25 cup Honey (Maple syrup can be used as a substitute)
  • 3 cloves Garlic (Minced; garlic powder can be used in a pinch)
  • 1 small Onion (Diced; yellow, white, or red onion works)
  • 2 cups Chicken broth (Water can be used with extra salt)
  • 1 tbsp Vinegar (Apple cider or white vinegar brightens the sauce)
  • 1 tbsp Butter or oil (For cooking the chicken and onions)
  • to taste N/A Salt
  • to taste N/A Pepper
  • 1 tsp Smoked paprika (Add more for extra flavor)
  • to taste N/A Chili flakes (Optional for added heat)

Instructions 

  • Cook chicken thighs in butter or oil until browned, then set aside.
  • Sauté diced onions and minced garlic until fragrant.
  • Add BBQ sauce, honey, vinegar, salt, pepper, smoked paprika, and chili flakes; simmer to combine.
  • Add chicken back to the sauce and cook through.
  • Meanwhile, cook rice in chicken broth until tender. Serve chicken over rice with sauce.

Notes

Adjust seasoning to taste and serve hot for best flavor.
