A comforting homemade chicken pot pie with flaky pastry and hearty filling, perfect for cozy dinners.

Ingredients

Vegetables and Chicken

  • 1 tablespoon olive oil
  • 1 large onion
  • 500 grams chicken
  • 400 grams button mushrooms
  • 2 large carrots
  • 2 stalks celery
  • 2 tablespoons butter
  • 40 grams flour
  • 250 ml chicken stock
  • 200 ml milk
  • 1 1/2 teaspoon garlic powder
  • 1 1/2 teaspoon dried thyme
  • 1 teaspoon dijon mustard
  • 50 grams parmesan cheese

Pastry and Egg Wash

  • 1 sheet puff pastry
  • 1 egg whisked egg
  • to taste salt and pepper
  • to finish sesame seeds (optional)

Instructions 

  • Cook diced onion in olive oil until translucent, then add chicken, salt, and pepper; brown the chicken.
  • Add carrots, celery, and mushrooms; cook for 5-7 minutes. Melt butter, stir in flour to form a roux, then add garlic powder and thyme.
  • Gradually pour in chicken stock and milk, stirring until thickened; stir in mustard and parmesan. Transfer filling to a dish, cover with pastry, brush with egg, and sprinkle sesame seeds.
  • Bake at 200°C for 25-30 minutes until golden. Serve hot.

Notes

Ensure the filling is thickened before baking for best results.
