Instructions
Add chicken, vegetables, and peppercorns to a stockpot. Cover with water and simmer until chicken is falling apart, about 1 hour.
Remove chicken, cool, then shred. Return bones and bits to stock, reduce to about 2 cups strained stock.
Sauté chopped onion in butter until translucent. Add milk, evaporated milk, and strained stock; simmer for 20 minutes.
Add shredded chicken, seasonings, and simmer for 10 minutes. Finish with cream of chicken soup and simmer another 10 minutes.
Notes
Shredding the chicken finely enhances the stew's texture and flavor.
