Ingredients

Protein

  • 2 pounds boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 0.5 teaspoon black pepper
  • 0.75 teaspoon kosher salt
  • 0.5 teaspoon paprika
  • 1 tablespoon fresh lemon juice
  • 0.5 cup plain Greek yogurt
  • 3 tablespoons light mayonnaise
  • 2 tablespoons grated Parmesan (plus more for finishing)
  • 1.5 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 small garlic clove, finely grated
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon salt (or to taste)

Wraps

  • 4 large burrito-size flour tortillas
  • 6 cups chopped romaine lettuce (washed and very well dried)
  • 0.5 cup shaved Parmesan
  • 1 cup croutons (lightly crushed)

Instructions 

  • Preheat oven to 425°F (220°C). Line a sheet pan or lightly grease a baking dish.
  • Pat chicken dry, then toss with olive oil, spices, and lemon juice. Bake for 12-14 minutes until cooked through. Rest for 5-7 minutes, then slice.
  • Mix Greek yogurt, mayonnaise, Parmesan, lemon juice, mustard, Worcestershire, garlic, pepper, and salt to make the Caesar dressing.
  • Combine sliced chicken, romaine, Parmesan, and dressing. Fold in crushed croutons just before assembling.
  • Warm tortillas briefly, then fill with the mixture, fold, and optionally sear in a skillet for 1-2 minutes per side until golden.

Notes

For extra flavor, add black pepper and lemon wedges when serving.
