Ingredients

Protein

  • 600 g boneless skinless chicken breast (cut into 1-inch cubes)
  • 600 g sweet potatoes (peeled and cut into 1-2 inch cubes)
  • 2 cups broccoli florets
  • 1/2 red onion red onion (sliced)
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 cup low-sugar BBQ sauce
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions 

  • Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper; roast for 15 minutes.
  • Season chicken cubes with salt and pepper. Add broccoli and red onion to the baking sheet with sweet potatoes; roast for another 10-12 minutes until chicken reaches 165°F (74°C).
  • Transfer chicken to a bowl and toss with BBQ sauce until coated. Divide sweet potatoes, vegetables, and BBQ chicken into four bowls.

Notes

For extra flavor, garnish with fresh herbs or a squeeze of lime.
