600gboneless skinless chicken breast(cut into 1-inch cubes)
600gsweet potatoes(peeled and cut into 1-2 inch cubes)
2cupsbroccoli florets
1/2red onionred onion(sliced)
1tablespoonolive oil
1/2teaspoongarlic powder
1/2teaspoonsmoked paprika
1/2cuplow-sugar BBQ sauce
1/2teaspoonkosher salt
1/4teaspoonground black pepper
Instructions
Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper; roast for 15 minutes.
Season chicken cubes with salt and pepper. Add broccoli and red onion to the baking sheet with sweet potatoes; roast for another 10-12 minutes until chicken reaches 165°F (74°C).
Transfer chicken to a bowl and toss with BBQ sauce until coated. Divide sweet potatoes, vegetables, and BBQ chicken into four bowls.
