A nutritious and flavorful twist on classic shepherd’s pie, featuring sweet potatoes and lean ground chicken.
Ingredients
Sweet Potatoes
2largesweet potatoes (peeled and cut into quarters)
Dairy & Seasonings
2 - 3tbspplain Greek yogurt (or butter)
¼cupparmesan cheese (optional)(grated or shredded)
½ tspgarlic powder
½ - 1tspsalt
½ tspblack pepper
Herbs & Vegetables
1 - 2tbspparsley or chives (chopped)(for garnish)
1lbground chicken(or turkey, beef, or lamb)
1tbspolive oil
1mediumyellow onion (diced)
3largecarrots (cut into coins)
3largegarlic cloves (minced)
2tbspgluten-free all-purpose flour
1tbsptomato paste
2tbspWorcestershire sauce
2 - 3tspsmoked paprika
1tspdried thyme
1cupchicken or vegetable broth
1cupfrozen peas
3 - 4cupsfresh spinach (roughly chopped)
Instructions
Preheat oven to 400°F and grease a baking dish.
Cook sweet potatoes until fork-tender, mash with yogurt, Parmesan, garlic powder, salt, and pepper.
Sauté onion and carrots, add garlic, then stir in flour. Cook ground meat until browned, add tomato paste, Worcestershire, spices, broth, peas, and spinach. Simmer until thickened.
Transfer filling to dish, spread mashed sweet potatoes on top, and bake for 25-30 minutes. Broil for 5 minutes for crispiness.
Let cool slightly, garnish with herbs, and serve.
Notes
For extra flavor, add a dash of hot sauce or your favorite herbs.
