A nutritious and flavorful twist on classic shepherd’s pie, featuring sweet potatoes and lean ground chicken.

Ingredients

Sweet Potatoes

  • 2 large sweet potatoes (peeled and cut into quarters)

Dairy & Seasonings

  • 2 - 3 tbsp plain Greek yogurt (or butter)
  • ¼ cup parmesan cheese (optional) (grated or shredded)
  • ½ tsp garlic powder
  • ½ - 1 tsp salt
  • ½ tsp black pepper

Herbs & Vegetables

  • 1 - 2 tbsp parsley or chives (chopped) (for garnish)
  • 1 lb ground chicken (or turkey, beef, or lamb)
  • 1 tbsp olive oil
  • 1 medium yellow onion (diced)
  • 3 large carrots (cut into coins)
  • 3 large garlic cloves (minced)
  • 2 tbsp gluten-free all-purpose flour
  • 1 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 2 - 3 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 cup chicken or vegetable broth
  • 1 cup frozen peas
  • 3 - 4 cups fresh spinach (roughly chopped)

Instructions 

  • Preheat oven to 400°F and grease a baking dish.
  • Cook sweet potatoes until fork-tender, mash with yogurt, Parmesan, garlic powder, salt, and pepper.
  • Sauté onion and carrots, add garlic, then stir in flour. Cook ground meat until browned, add tomato paste, Worcestershire, spices, broth, peas, and spinach. Simmer until thickened.
  • Transfer filling to dish, spread mashed sweet potatoes on top, and bake for 25-30 minutes. Broil for 5 minutes for crispiness.
  • Let cool slightly, garnish with herbs, and serve.

Notes

For extra flavor, add a dash of hot sauce or your favorite herbs.
