A delicious and nutritious wrap filled with grilled chicken and fresh vegetables, perfect for a quick lunch or dinner.

Ingredients

Protein

  • 2 pieces Grilled or baked chicken breast
  • 4 pieces Whole grain wrap
  • 2 cups Tomatoes (diced)
  • 1 cup Cucumbers (sliced)
  • 1 cup Bell peppers (sliced into strips)
  • 1 cup Spinach or lettuce
  • 0.5 cup Red onion (sliced)
  • 2 tablespoons Olive oil
  • 0.25 cup Hummus or tzatziki sauce or pesto
  • 1 tablespoon Feta cheese (optional)
  • 1 tablespoon Lemon juice
  • 2 cloves Garlic (minced)
  • 1 teaspoon Oregano
  • to taste Salt

Instructions 

  • Marinate chicken in olive oil, lemon juice, garlic, oregano, and salt for 30 minutes, then grill or bake until cooked.
  • Let chicken rest, then slice or shred.
  • Prepare vegetables: dice tomatoes, slice cucumbers, bell peppers, red onion, and wash greens.
  • Warm the wrap, spread hummus or sauce, layer vegetables, chicken, drizzle with olive oil, add feta and lemon juice.
  • Fold and roll the wrap, then slice and serve.

Notes

For extra flavor, add fresh herbs or a dash of hot sauce.
