Ingredients

Protein

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

Vegetables

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated

Spices

  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric

Canned Goods

  • 1 can 14 oz coconut milk
  • 1 cup diced tomatoes

Greens

  • 2 cups fresh spinach (or kale)
  • to taste Salt and pepper
  • 2 tablespoons olive oil

For Serving

  • as needed Cooked rice or naan

Instructions 

  • Heat olive oil in a skillet, cook diced onion until translucent (~5 min).
  • Add garlic and ginger, sauté for 1 minute.
  • Stir in spices: curry powder, cumin, turmeric; cook 30 seconds.
  • Add chicken, cook 5-7 minutes until no longer pink. Pour in coconut milk and tomatoes, simmer 15 minutes.
  • Stir in spinach, cook 2-3 minutes until wilted. Season with salt and pepper.

Notes

For extra flavor, add red pepper flakes or fresh herbs.
