Instructions
Pat chicken dry, season with salt, pepper, and half the garlic. Cook in a skillet over medium heat for 5 minutes per side, then rest and slice thinly.
Toss broccoli, bell pepper, zucchini with remaining olive oil, garlic, salt, and pepper. Sauté until tender-crisp, about 6-7 minutes, adding spinach in the last minute.
