Ingredients

Protein

  • 12 oz skinless, boneless chicken breasts
  • 2 cups broccoli florets (steamed or roasted)
  • 1 medium red bell pepper (diced)
  • 1 medium zucchini (sliced)
  • 2 cups baby spinach
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic (minced)
  • 1 tablespoon lemon juice

Fresh herbs

  • a handful parsley or cilantro (chopped)
  • to taste salt and fresh cracked pepper
  • Optional chili flakes
  • Optional avocado slices
  • ½ cup cooked quinoa or brown rice (optional)

Instructions 

  • Pat chicken dry, season with salt, pepper, and half the garlic. Cook in a skillet over medium heat for 5 minutes per side, then rest and slice thinly.
  • Toss broccoli, bell pepper, zucchini with remaining olive oil, garlic, salt, and pepper. Sauté until tender-crisp, about 6-7 minutes, adding spinach in the last minute.
  • Divide cooked veggies into bowls, add optional quinoa or rice, top with chicken slices, drizzle with lemon juice, and garnish with herbs and chili flakes if desired.
