Ingredients

Marinade

  • 3 tablespoons olive oil
  • 100 ml lime juice freshly squeezed
  • 2 tablespoons chopped cilantro
  • 2 cloves garlic, crushed
  • 1 teaspoon brown sugar
  • ¾ teaspoon red chili flakes (adjust to taste)
  • ½ teaspoon ground cumin
  • 1 teaspoon salt
  • 4 pieces boneless, skinless chicken thigh fillets

Vegetables

  • ½ yellow bell pepper sliced
  • ½ red bell pepper sliced
  • ½ onion sliced

Salad & Garnishes

  • 5 cups romaine or cos lettuce, washed and dried
  • 2 pieces avocados, sliced

Extras

  • as needed extra cilantro for garnish
  • as needed sour cream for serving
  • as needed lime wedges for serving

Instructions 

  • Whisk marinade ingredients together, then coat chicken and marinate for 2 hours.
  • Grill chicken until golden and cooked through, then rest and slice into strips.
  • Sauté bell peppers and onions until tender and slightly charred.
  • Assemble bowls with lettuce, avocado, vegetables, and chicken; drizzle with reserved marinade.
  • Garnish with cilantro, add lime wedges, and serve with sour cream if desired.

Notes

Marinate chicken thoroughly for best flavor. Adjust chili flakes to taste.
