A light and nutritious twist on the classic Caesar salad, packed with fresh ingredients and homemade dressing.

Instructions
Season chicken breasts with salt, pepper, and thyme, then cook in olive oil until golden and cooked through. Slice and set aside.
In a small bowl, whisk together lemon juice, minced garlic, and additional thyme if desired to make the dressing.
In a large bowl, toss chopped romaine with Caesar dressing, sliced chicken, croutons, and parmesan cheese.
Serve immediately, garnished with extra parmesan if desired.
Notes
For a lighter option, use less dressing and cheese.
