A light and nutritious twist on the classic Caesar salad, packed with fresh ingredients and homemade dressing.

Ingredients

Protein

  • 1 lb boneless, skinless chicken breasts

Oil

  • 1 Tbsp olive oil

Dressing

  • 2 Tbsp fresh lemon juice
  • 2 cloves garlic (minced)
  • 1 Tbsp fresh thyme (or 1 tsp dried thyme)
  • 1 tsp salt
  • 0.5 tsp black pepper

Salad Greens

  • 2 heads romaine (chopped, about 8 cups)

Dressing & Toppings

  • Caesar dressing
  • Homemade croutons
  • 0.25 cup freshly grated parmesan cheese

Instructions 

  • Season chicken breasts with salt, pepper, and thyme, then cook in olive oil until golden and cooked through. Slice and set aside.
  • In a small bowl, whisk together lemon juice, minced garlic, and additional thyme if desired to make the dressing.
  • In a large bowl, toss chopped romaine with Caesar dressing, sliced chicken, croutons, and parmesan cheese.
  • Serve immediately, garnished with extra parmesan if desired.

Notes

For a lighter option, use less dressing and cheese.
