A nutritious and flavorful bowl combining roasted sweet potatoes, tender chicken, and fresh toppings, perfect for a wholesome meal.

Ingredients

Sweet potatoes

  • 4 medium Sweet potatoes (Any orange-fleshed sweet potato works.)
  • 2 tablespoons Olive oil (Can substitute with avocado oil.)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1.5 pounds Chicken breast (Can substitute with turkey breast or rotisserie chicken.)
  • 1 cup BBQ sauce (Choose low-sugar or reduced-sodium if desired.)
  • 1 cup Fresh toppings (e.g., avocado, cilantro, green onions. Can swap toppings for others like parsley or chives.)

Instructions 

  • Preheat oven to 400°F (200°C). Roast diced sweet potatoes with 1 tbsp olive oil, salt, and pepper for 25-30 minutes.
  • While sweet potatoes roast, cook chicken breasts until fully cooked, then shred or dice.
  • Warm the BBQ sauce and toss cooked chicken in it.
  • Assemble bowls with roasted sweet potatoes, BBQ chicken, and fresh toppings.
  • Serve immediately and enjoy!

Notes

For extra flavor, add a squeeze of lime or a sprinkle of cheese.
