Enjoy tender, flavorful grilled chicken glazed with a sweet and savory Hawaiian teriyaki sauce, complemented by smoky grilled pineapple slices.

Ingredients

Meat

  • 2 lbs boneless skinless chicken thighs
  • 1 cup pineapple juice
  • 0.5 cup low-sodium soy sauce
  • 0.33 cup brown sugar
  • 3 cloves minced garlic
  • 1 tbsp grated fresh ginger
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 fresh pineapple sliced
  • Green onions chopped for garnish (optional)
  • 2 tbsp cornstarch mixed with water

Instructions 

  • Whisk pineapple juice, soy sauce, brown sugar, garlic, ginger, rice vinegar, and sesame oil to make the marinade. Reserve half for basting. Slice pineapple and pat chicken dry.
  • Marinate chicken for at least 30 minutes. Preheat grill to medium-high (around 400°F). Grill chicken 5-7 minutes per side, basting with reserved marinade. Grill pineapple slices 2 minutes per side.
  • Simmer reserved marinade with cornstarch slurry until thickened. Rest chicken, slice against the grain, drizzle with glaze, and garnish with green onions before serving.
