A fresh and wholesome salad combining roasted sweet potatoes, tender chicken, crisp apples, and a tangy cider vinaigrette, perfect for a healthy meal.

Ingredients

Protein

  • 24 oz raw chicken breast, sliced thin
  • 1 tbsp lemon juice
  • 1.5 tsp lemon zest
  • 0.5 tsp garlic powder
  • 0.5 tsp dried thyme
  • 0.5 tsp dried oregano (optional)
  • 0.5 tsp black pepper
  • 0.5 tsp salt (optional)
  • 24 oz raw sweet potato, peeled and cut into bite-sized chunks (*)
  • 6 cups kale, tough stems removed (*)
  • 3 cups apple, chopped (*)
  • 6 tbsp pecans, chopped (*)
  • 6 tbsp red onion, sliced thin (optional)
  • 0.25 cup orange juice (or apple juice)
  • 3 tbsp apple cider vinegar
  • 3 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tbsp minced garlic (or 3/8 tsp garlic powder)
  • 1 tsp Dijon mustard
  • 0.5 tsp dried thyme
  • 0.25 tsp black pepper
  • 0.25 tsp sea salt

Instructions 

  • Preheat oven to 425°F (220°C). Roast sweet potato chunks with garlic powder and salt for 30-40 minutes until browned and tender.
  • Season chicken with lemon juice, zest, garlic, thyme, oregano, salt, and pepper. Let sit 20 minutes.
  • Mix dressing ingredients in a jar and shake well. Massage kale until wilted. Chop apples, pecans, and onion.
  • Cook chicken in a skillet over medium-high heat for 5-6 minutes per side until cooked through. Let cool.
  • Assemble salads with kale, chicken, sweet potatoes, apples, pecans, onion, and dressing. Serve immediately or store for up to 5 days.

Notes

For best results, prepare and store salads in airtight containers. Adjust ingredients to taste.
