Instructions
Preheat oven to 425°F (220°C). Roast sweet potato chunks with garlic powder and salt for 30-40 minutes until browned and tender.
Season chicken with lemon juice, zest, garlic, thyme, oregano, salt, and pepper. Let sit 20 minutes.
Mix dressing ingredients in a jar and shake well. Massage kale until wilted. Chop apples, pecans, and onion.
Cook chicken in a skillet over medium-high heat for 5-6 minutes per side until cooked through. Let cool.
Assemble salads with kale, chicken, sweet potatoes, apples, pecans, onion, and dressing. Serve immediately or store for up to 5 days.
Notes
For best results, prepare and store salads in airtight containers. Adjust ingredients to taste.
