A hearty and nutritious casserole combining sweet potatoes, Brussels sprouts, chicken, and cheese, topped with cranberries and pepitas for added flavor.

2cupssweet potatoes (peeled and diced)
2cupsBrussels sprouts (outer leaves removed and quartered)
½cupred onion (diced)

Instructions
Preheat oven to 350ºF (180ºC). Place sweet potatoes, Brussels sprouts, and red onion in a casserole dish. Top with half of the olive oil, chicken stock, salt, and pepper. Cover with foil and bake for 35-40 minutes until sweet potatoes are soft.
While baking, heat the remaining olive oil in a skillet over medium-high heat. Season chicken cubes with salt and pepper, then cook until browned on all sides.
Add broccolini to the skillet and cook for a few more minutes. Remove casserole from oven, add cooked chicken and broccolini, top with cheddar cheese, and bake for 15 minutes until bubbly.
Serve topped with pepitas and dried cranberries.
Notes
For extra flavor, add herbs like thyme or rosemary before baking.
