A hearty and nutritious casserole combining sweet potatoes, Brussels sprouts, chicken, and cheese, topped with cranberries and pepitas for added flavor.

Ingredients

Vegetables

  • 2 cups sweet potatoes (peeled and diced)
  • 2 cups Brussels sprouts (outer leaves removed and quartered)
  • ½ cup red onion (diced)

Oils and Broth

  • 2 tbsp extra-virgin olive oil (divided)
  • 1 cup chicken stock (or chicken broth)

Protein

  • 2 chicken breasts boneless, skin removed, and cut into cubes

  • ½ cup broccolini

Dairy & Toppings

  • ½ cup sharp cheddar cheese (shredded)

Instructions 

  • Preheat oven to 350ºF (180ºC). Place sweet potatoes, Brussels sprouts, and red onion in a casserole dish. Top with half of the olive oil, chicken stock, salt, and pepper. Cover with foil and bake for 35-40 minutes until sweet potatoes are soft.
  • While baking, heat the remaining olive oil in a skillet over medium-high heat. Season chicken cubes with salt and pepper, then cook until browned on all sides.
  • Add broccolini to the skillet and cook for a few more minutes. Remove casserole from oven, add cooked chicken and broccolini, top with cheddar cheese, and bake for 15 minutes until bubbly.
  • Serve topped with pepitas and dried cranberries.

Notes

For extra flavor, add herbs like thyme or rosemary before baking.
