Ingredients

Marinade

  • 0.33 cup soy sauce
  • 2 tablespoons fresh lime juice
  • 2 tablespoons minced garlic
  • 2 tablespoons minced fresh ginger
  • 2 teaspoons curry powder

Chicken

  • 24 ounces boneless, skinless chicken breasts

Broth

  • 1 cup low sodium chicken broth
  • 1 tablespoon cornstarch

Garnish

  • to taste Minced cilantro or parsley (for garnish)

Instructions 

  • Mix soy sauce, lime juice, garlic, ginger, and curry powder to make the marinade.
  • Marinate chicken breasts in the mixture for at least 30 minutes.
  • Preheat grill and cook chicken for 6-8 minutes per side until fully cooked.
  • In a small saucepan, combine chicken broth and cornstarch, then simmer until thickened.
  • Slice grilled chicken and serve with sauce, garnished with cilantro or parsley.
