Ingredients
Marinade
3tablespoonsolive oil
100mllime juice (freshly squeezed)
2tablespoonscilantro (chopped)
2clovesgarlic (crushed)
1teaspoonbrown sugar
3/4teaspoonred chili flakes (or red pepper flakes - adjust to your preference of spice)
1/2teaspoonground cumin
1teaspoonsalt
4boneless chicken thigh filletsskin removed
1/2yellow bell pepperdeseeded and sliced
1/2red bell pepperdeseeded and sliced
1/2onionsliced
5cupsRomaine lettuce (or cos lettuce leaves, washed and dried)
2avocadossliced
1 pinchcilantro (extra to garnish)
1 pinchsour cream (optional - to serve)
Instructions
Whisk marinade ingredients together and marinate chicken for 2 hours.
Grill chicken until golden and cooked through, then rest.
Fry peppers and onion in a pan until tender.
Slice chicken and assemble salad with lettuce, avocado, peppers, onion, and chicken. Drizzle with marinade and garnish with cilantro and sour cream if desired.
