Ingredients

Marinade

  • 1/4 cup chopped fresh cilantro
  • 3 Tbsp. fresh lime juice
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 1/2 tsp. kosher salt

Chicken

  • 6 pieces skinless, boneless chicken thighs, sliced in half (about 2 lbs total)
  • to taste Black pepper

Guacamole

  • 2 plum tomatoes chopped
  • 2 large ripe avocados
  • 1 Tbsp. finely chopped white onion
  • 2 Tbsp. finely chopped fresh cilantro
  • 2-3 Tbsp. fresh lime juice
  • 1 clove garlic, minced
  • to taste Kosher salt
  • 12 buns slider buns

Instructions 

  • Whisk cilantro, lime juice, olive oil, garlic, and salt to make marinade.
  • Add chicken to marinade, cover, and refrigerate for up to 30 minutes.
  • Prepare guacamole by mashing all ingredients until chunky; refrigerate until serving.
  • Grill chicken for about 3 minutes per side until cooked through, then rest.
  • Assemble sliders with grilled chicken and guacamole, then serve immediately.

Notes

For extra flavor, add a squeeze of lime before serving.
