A delicious and easy-to-make sandwich featuring grilled chicken, fresh mozzarella, basil pesto, and ripe tomatoes on crusty bread.

Ingredients

Meat

  • 4 pieces boneless skinless chicken breast halves
  • olive oil olive oil
  • kosher salt kosher salt
  • freshly ground black pepper black pepper

Cheese

  • 6 ounces mozzarella (sliced)

Bread

  • 1 loaf focaccia focaccia bread (sliced into 4 pieces, each cut in half horizontally)
  • ½ cup basil pesto cups basil pesto (or more to taste)
  • 1 large tomato large tomato (sliced)

For serving

  • romaine lettuce romaine lettuce (for serving)

Instructions 

  • Brush chicken with olive oil and season with salt and pepper.
  • Grill chicken over medium-high heat until cooked through, about 5-8 minutes per side. Add cheese in the last 2 minutes to melt.
  • Spread pesto on bread slices. Place cooked chicken on bread, top with tomato slices and lettuce. Serve warm.

Notes

For extra flavor, toast the bread lightly before assembling.
