A flavorful and healthy bowl combining grilled chicken, steamed broccoli, and creamy garlic sauce over rice or quinoa.

Ingredients

Chicken Marinade

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper (optional)
  • 1 unit lime (juice only)

Creamy Garlic Sauce

  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

For the Bowls

  • 1 pound broccoli florets (steamed or roasted)
  • 2 cups cooked rice or quinoa
  • for serving Lime wedges

Instructions 

  • Marinate the chicken with the marinade ingredients and refrigerate for at least 30 minutes.
  • Grill the chicken until cooked through, then rest and slice.
  • Steam or roast broccoli until tender.
  • Whisk together all sauce ingredients to make the creamy garlic sauce.
  • Assemble bowls with rice, broccoli, chicken, and drizzle with sauce. Serve with lime wedges.

Notes

Marinating the chicken longer enhances flavor. Feel free to add hot sauce for extra spice.
