Ingredients

marinade

  • 1 clove garlic, minced
  • 1 tbsp balsamic vinegar
  • 1 tbsp orange zest
  • 1 tbsp fresh thyme leaves
  • 1 tbsp extra virgin olive oil

chicken

  • 2 pieces boneless, skinless chicken breasts

salad greens

  • 1 head butter lettuce
  • 0.25 head radicchio

citrus

  • 3 oranges naval or cara cara or blood oranges
  • 1 ripe avocado
  • 2 oz feta cheese
  • 3 tbsp toasted and salted pistachios
  • 1 tbsp everything but the bagel seasoning
  • 0.25 cup lime juice
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tbsp dijon mustard
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 0.25 tsp ground cumin
  • 0.5 cup extra virgin olive oil

Instructions 

  • Whisk garlic, thyme, balsamic vinegar, and olive oil; marinate chicken for 10 minutes.
  • Grill chicken over medium heat until cooked through, then rest for 10 minutes.
  • Mix lime juice, honey, vinegar, mustard, garlic, salt, pepper, and cumin; slowly add olive oil to make dressing.
  • Assemble salad with greens, orange slices, avocado, feta, pistachios, and seasonings; toss with dressing.
