A healthy and creamy chicken salad with fresh grapes and crunchy almonds, perfect for a quick lunch or light dinner.

Ingredients

Protein

  • 2 cups shredded chicken
  • ½ cup grapes, halved
  • ½ cup chopped celery
  • ¼ cup diced red onion
  • ½ cup plain Greek yogurt
  • 2 Tablespoons chopped salted almonds
  • ½ Tablespoon Dijon mustard
  • 1 Tablespoon chopped parsley
  • ¼ teaspoon pepper
  • teaspoon fine sea salt

Instructions 

  • Shred the chicken into bite-sized pieces.
  • Combine chicken, grapes, celery, and onion in a bowl.
  • Mix yogurt, mustard, parsley, salt, and pepper in a separate bowl.
  • Pour dressing over chicken mixture and stir to combine.
  • Stir in almonds and chill for 30 minutes before serving.

Notes

For extra flavor, add a squeeze of lemon before serving.
