Ingredients

Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 8 oz creamy goat cheese
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh rosemary, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • to taste Salt and pepper

Instructions 

  • Preheat oven to 400°F (200°C). Slice pockets into each chicken breast.
  • Mix goat cheese, garlic, thyme, rosemary, salt, and pepper until well combined.
  • Stuff each chicken breast with the cheese mixture and place in a baking dish.
  • Drizzle with olive oil and season with additional salt and pepper.
  • Bake for 25-30 minutes until cooked through and golden brown.
