Ingredients

Meat

  • 4 ounces goat cheese
  • 0.25 cup pepperoncini, finely chopped
  • 1.5 teaspoons fresh thyme leaves, finely chopped
  • to taste salt and ground pepper
  • 4 pieces bone-in, skin-on chicken breasts (~2 pounds)

Instructions 

  • Preheat oven to 425°F (220°C). Heat a skillet over medium-high heat.
  • Mix goat cheese, chopped pepperoncini, thyme, salt, and pepper until smooth.
  • Cut a slit in each chicken breast to create a pocket. Stuff with about 2 tablespoons of cheese mixture.
  • Season chicken with salt and pepper. Sear skin side down for 5 minutes, then transfer skillet to oven and bake for 18-20 minutes.
  • Flip chicken, let rest for 3 minutes, then serve garnished with thyme if desired.

Notes

Ensure chicken is cooked through by checking internal temperature (165°F/74°C).
