pepperoncini, finely chopped

bone-in, skin-on chicken breasts (~2 pounds)
Instructions
Preheat oven to 425°F (220°C). Heat a skillet over medium-high heat.
Mix goat cheese, chopped pepperoncini, thyme, salt, and pepper until smooth.
Cut a slit in each chicken breast to create a pocket. Stuff with about 2 tablespoons of cheese mixture.
Season chicken with salt and pepper. Sear skin side down for 5 minutes, then transfer skillet to oven and bake for 18-20 minutes.
Flip chicken, let rest for 3 minutes, then serve garnished with thyme if desired.
