Ingredients

Base

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 2 carrots peeled and chopped carrots
  • 6 cloves garlic, minced
  • 1 pound chicken breasts or thighs
  • 6 cups low-sodium chicken broth
  • 1 teaspoon Italian seasoning
  • 1 cup short pasta (ditalini or small shells)
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • to taste Salt Salt
  • to taste Black pepper Black pepper
  • 2 tablespoons chopped fresh parsley

Instructions 

  • Heat olive oil and butter in a large pot. Sauté onions, carrots, and garlic until softened.
  • Add chicken, broth, and Italian seasoning. Simmer until chicken is cooked through.
  • Remove chicken, shred, and return to the pot. Add pasta and cook until al dente.
  • Turn off heat, stir in heavy cream and Parmesan cheese. Add parsley, season, and serve.

Notes

For a richer flavor, use freshly grated Parmesan and adjust seasoning to taste.
