Instructions
Heat olive oil and butter in a large pot. Sauté onions, carrots, and garlic until softened.
Add chicken, broth, and Italian seasoning. Simmer until chicken is cooked through.
Remove chicken, shred, and return to the pot. Add pasta and cook until al dente.
Turn off heat, stir in heavy cream and Parmesan cheese. Add parsley, season, and serve.
Notes
For a richer flavor, use freshly grated Parmesan and adjust seasoning to taste.
