A creamy, cheesy pasta bake with tender chicken, roasted garlic, and fresh spinach, perfect for a comforting dinner.

Ingredients

Dried ingredients

  • 8 Tbsp salted butter (divided, adjust to taste)
  • 24 oz boneless skinless chicken breasts (about 3 medium)
  • 1.5 tsp fine sea salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 0.5 tsp black pepper
  • 0.5 Tbsp minced garlic (about 6 cloves)
  • 8 oz rotini pasta
  • 4 bulbs roasted garlic cloves (squeezed out)
  • 0.75 cup chicken stock
  • 4 oz parmesan cheese (finely grated, 1¼ cups)
  • 0.5 cup heavy cream
  • 1 Tbsp dried parsley (optional)
  • 8 oz fresh spinach (optional)

Instructions 

  • Roast garlic if not done already, then squeeze cloves into a bowl.
  • Cut chicken into 1-inch cubes and season with salt, onion powder, garlic powder, and pepper.
  • Set Ninja Foodi or Instant Pot to High Sear Sauté, melt 2-4 Tbsp butter, sear chicken until browned, then add minced garlic and cook for 2-3 minutes.
  • Add pasta, roasted garlic, chicken broth, and remaining butter; scrape to loosen bits.
  • Pressure cook on High for 4 minutes, then release pressure naturally for 10 minutes.
  • Stir in parmesan until melted, add heavy cream to reach desired sauce consistency, stir in parsley and spinach if using, then serve.

Notes

For a richer flavor, use freshly grated parmesan and fresh spinach.
