Ingredients

Protein

  • 1.5 pounds boneless, skinless chicken breasts (cut into 1-inch pieces)
  • 1 teaspoon paprika
  • 1 teaspoon garlic salt
  • 0.5 teaspoon ground black pepper

Dairy & Fats

  • 2 tablespoons unsalted butter
  • 1 large yellow onion (finely diced (about 1 cup))
  • 1 tablespoon garlic (minced)

Grains

  • 1.5 cups uncooked long-grain white rice

Broth & Liquids

  • 3 cups chicken broth
  • 0.5 cup parmesan cheese (grated, plus extra for garnish)
  • 0.5 cup heavy whipping cream

Garnish

  • fresh parsley (for garnish)

Instructions 

  • Season chicken with paprika, garlic salt, and pepper.
  • Melt butter in a large pot over medium heat; cook onion until softened.
  • Add chicken and cook until golden; stir in garlic, then add rice and broth. Bring to boil, then simmer covered for 15-20 minutes until rice is tender.
  • Remove from heat; stir in Parmesan and cream until creamy. Garnish with parsley and extra Parmesan. Serve immediately.

Notes

For extra flavor, sprinkle additional Parmesan and fresh parsley before serving.
