A flavorful and easy one-pan dinner featuring tender chicken, crispy potatoes, and a cheesy garlic Parmesan topping.

Ingredients

Protein

  • 4 pieces boneless (skinless chicken breasts (or thighs))

Spices and seasonings

  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Cooking fats

  • 1 tablespoon olive oil

Vegetables

  • 1.5 pounds baby Yukon Gold or red potatoes (halved)
  • 3 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 0.33 cup grated Parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions 

  • Season chicken with Italian seasoning, smoked paprika, salt, and black pepper.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat and cook chicken until golden and cooked through, about 6-8 minutes per side.
  • Remove chicken and in the same skillet, add 3 tablespoons olive oil and potatoes. Cook until crispy and tender, about 15 minutes.
  • Add minced garlic to the potatoes and cook for 1 minute. Sprinkle Parmesan cheese, parsley, salt, and black pepper over the dish.
  • Return chicken to the skillet, garnish with additional Parmesan and parsley if desired, and serve hot.

Notes

For extra flavor, sprinkle additional Parmesan and fresh herbs before serving.
