Instructions
Season chicken with Italian seasoning, smoked paprika, salt, and black pepper.
Heat 1 tablespoon olive oil in a large skillet over medium heat and cook chicken until golden and cooked through, about 6-8 minutes per side.
Remove chicken and in the same skillet, add 3 tablespoons olive oil and potatoes. Cook until crispy and tender, about 15 minutes.
Add minced garlic to the potatoes and cook for 1 minute. Sprinkle Parmesan cheese, parsley, salt, and black pepper over the dish.
Return chicken to the skillet, garnish with additional Parmesan and parsley if desired, and serve hot.
Notes
For extra flavor, sprinkle additional Parmesan and fresh herbs before serving.
