Instructions
Cook the pasta in salted boiling water until al dente, then drain and set aside.
Heat 1 tablespoon olive oil in a skillet, cook chicken until golden and cooked through, then transfer to a plate.
In the same skillet, sauté garlic, bell peppers, and mushrooms until tender and caramelized.
Return chicken to the skillet, add balsamic vinegar, and stir to coat everything in the sauce.
Add cooked pasta to the skillet, toss to combine, and heat through. Garnish with parsley before serving.
Notes
For extra flavor, marinate the chicken with herbs before cooking.
