A flavorful and healthy pasta dish featuring tender chicken, sautéed vegetables, and whole wheat penne coated in a balsamic glaze.

Ingredients

Protein

  • 2 pieces boneless skinless chicken breasts (sliced into strips)
  • 2 tablespoons olive oil (divided)

Vegetables

  • 1 piece red bell pepper (chopped)
  • 1 cup mushrooms (sliced)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried Italian herbs
  • to taste Salt and black pepper
  • 1 tablespoon balsamic vinegar
  • 6 oz whole wheat penne pasta

Garnish

  • to taste Fresh parsley (chopped)

Instructions 

  • Cook the pasta in salted boiling water until al dente, then drain and set aside.
  • Heat 1 tablespoon olive oil in a skillet, cook chicken until golden and cooked through, then transfer to a plate.
  • In the same skillet, sauté garlic, bell peppers, and mushrooms until tender and caramelized.
  • Return chicken to the skillet, add balsamic vinegar, and stir to coat everything in the sauce.
  • Add cooked pasta to the skillet, toss to combine, and heat through. Garnish with parsley before serving.

Notes

For extra flavor, marinate the chicken with herbs before cooking.
