A flavorful one-pan meal featuring tender chicken and colorful roasted vegetables, perfect for a quick and healthy dinner.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts (cut into chunks)

Oil

  • 2 tablespoons olive oil (divided)

Spices & Seasonings

  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon dried oregano
  • to taste Salt and black pepper

Vegetables

  • 1 cup broccoli florets
  • 1 medium zucchini (sliced)
  • 1 red bell pepper chopped red bell pepper
  • 1 yellow bell pepper chopped yellow bell pepper
  • 1 medium carrot (sliced)
  • 2 cloves garlic (minced)

Optional Garnishes

  • to taste Fresh parsley, chopped
  • to taste Red pepper flakes

Instructions 

  • Toss chicken with spices, then cook in 1 tbsp oil until golden, about 6–8 minutes. Remove and set aside.
  • Sauté vegetables in remaining oil for 5–7 minutes until tender-crisp. Add garlic and cook 30 seconds.
  • Return chicken to skillet, toss to combine, and cook 2–3 minutes. Garnish with parsley and red pepper flakes if desired.

Notes

Adjust seasoning to taste and serve hot straight from the skillet.
