Instructions
Preheat oven to 425°F. Coat a roasting pan with olive oil.
Rinse and dry the chicken. Mix olive oil, melted butter, and lemon juice; pour over and rub under the skin and inside the cavity.
Season with salt, pepper, and sprinkle with parsley. Prepare herb butter with butter, herbs, lemon zest, garlic, and paprika; rub all over the chicken.
Stuff the chicken with garlic, rosemary, thyme, and lemon. Tie legs with kitchen string.
