Garlic Chilli Chicken & Couscous One-Pot Meal

A flavorful and easy one-pot dish combining spicy chicken, vibrant peppers, and fluffy couscous for a satisfying meal.

Ingredients

Main

  • 1 tbsp olive oil (or garlic-infused olive oil)
  • 2 pieces chicken breasts (diced)
  • 4 cloves garlic (minced)
  • 1 red chilli red chilli (finely chopped) (adjust to taste)
  • 1 red pepper red pepper (diced)
  • 1 yellow pepper yellow pepper (diced)
  • 100 g cherry tomatoes (halved)
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 0.5 tsp dried oregano
  • 0.5 tsp black pepper
  • 500 ml chicken stock
  • 200 g couscous
  • 2 tbsp chopped fresh parsley or coriander (optional for garnish)

Instructions 

  • Heat olive oil in a large pan over medium heat.
  • Add diced chicken and cook for 3 minutes until browned.
  • Stir in 2 minced garlic cloves and cook for 1-2 minutes.
  • Add tomatoes, peppers, chilli, spices, and cook for 3-4 minutes.
  • Pour in chicken stock, bring to boil, then simmer for 10 minutes. Off heat, stir in remaining garlic, add couscous, cover, and sit for 5-7 minutes. Fluff with a fork, garnish with herbs.

Notes

Adjust seasoning and spice level to taste.
