1tbspolive oil (or garlic-infused olive oil)
2pieceschicken breasts (diced)
4clovesgarlic (minced)
1red chillired chilli (finely chopped)(adjust to taste)
1red pepperred pepper (diced)
1yellow pepperyellow pepper (diced)
100gcherry tomatoes (halved)
1tspsmoked paprika
1tspground cumin
0.5tspdried oregano
0.5tspblack pepper
500mlchicken stock
200gcouscous
2tbspchopped fresh parsley or coriander(optional for garnish)
Instructions
Heat olive oil in a large pan over medium heat.
Add diced chicken and cook for 3 minutes until browned.
Stir in 2 minced garlic cloves and cook for 1-2 minutes.
Add tomatoes, peppers, chilli, spices, and cook for 3-4 minutes.
Pour in chicken stock, bring to boil, then simmer for 10 minutes. Off heat, stir in remaining garlic, add couscous, cover, and sit for 5-7 minutes. Fluff with a fork, garnish with herbs.
