Garlic Butter Chicken with Parmesan Rice

A flavorful and comforting dish featuring tender garlic butter chicken served alongside cheesy Parmesan rice.

Ingredients

Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1 tablespoon fresh parsley, chopped
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tablespoon butter
  • to taste Salt
  • to taste Pepper

Instructions 

  • Season chicken breasts with salt and black pepper.
  • In a skillet, melt 2 tablespoons of butter and cook chicken 6-7 minutes per side until browned and cooked through. Remove and set aside.
  • In the same skillet, add remaining butter, garlic, and Italian seasoning; cook until fragrant (~30 seconds). Return chicken to coat in sauce.
  • Rinse rice under cold water. In a saucepan, combine rice and chicken broth; bring to a boil, then simmer covered for 15-20 minutes until liquid is absorbed. Fluff rice.
  • Stir Parmesan cheese and butter into rice; season with salt and pepper to taste. Serve chicken over Parmesan rice, garnished with parsley.

Notes

For extra flavor, add a squeeze of lemon over the chicken before serving.
