A flavorful and comforting dish featuring tender garlic butter chicken served alongside cheesy Parmesan rice.
Ingredients
Chicken
4piecesboneless, skinless chicken breasts
1tspsalt
1tspblack pepper
4tablespoonsbutter
4clovesgarlic, minced
1teaspoondried Italian seasoning
1tablespoonfresh parsley, chopped
1cuplong-grain white rice
2cupschicken broth
½cupgrated Parmesan cheese
1tablespoonbutter
to tasteSalt
to tastePepper
Instructions
Season chicken breasts with salt and black pepper.
In a skillet, melt 2 tablespoons of butter and cook chicken 6-7 minutes per side until browned and cooked through. Remove and set aside.
In the same skillet, add remaining butter, garlic, and Italian seasoning; cook until fragrant (~30 seconds). Return chicken to coat in sauce.
Rinse rice under cold water. In a saucepan, combine rice and chicken broth; bring to a boil, then simmer covered for 15-20 minutes until liquid is absorbed. Fluff rice.
Stir Parmesan cheese and butter into rice; season with salt and pepper to taste. Serve chicken over Parmesan rice, garnished with parsley.
Notes
For extra flavor, add a squeeze of lemon over the chicken before serving.
