  • 3 pounds chicken wings
  • 1.5 teaspoons kosher salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 1 tablespoon baking powder
  • 0.5 cup butter
  • 4-8 cloves garlic minced (see note)
  • sprinkle crushed red pepper (optional)
  • 2 tablespoons parsley (very finely chopped)

Instructions 

  • Preheat oven to 425°F (220°C). Line baking sheets with parchment and spray with cooking spray.
  • Pat chicken wings dry, then toss with a mixture of salt, pepper, garlic powder, and baking powder to coat evenly.
  • Arrange wings on baking sheets without crowding. Bake for 20 minutes, flip, then bake for another 20-25 minutes until crispy.
  • Meanwhile, melt butter in a saucepan, add garlic and red pepper if using, cook 1-2 minutes, then stir in parsley.
  • Remove wings from oven, transfer to a large bowl, toss with garlic butter, then serve immediately.

Notes

For extra crispiness, dry wings thoroughly before baking.
