A flavorful one-pan dish featuring tender chicken thighs cooked with aromatic vegetables, garlic, lemon, and buttery rice for a satisfying meal.

Ingredients

Meat

  • 4 pieces chicken thighs

Vegetables

  • 2 sticks celery sticks diced
  • 2 pieces carrots diced
  • 2 pieces onions diced

Aromatics

  • 3 tbsp crushed garlic (or 8 fresh cloves)
  • 150 g butter (go on, don’t be shy)
  • 2 slices lemons
  • 2 tbsp chicken stock powder

Grains

  • 1.5 cups basmati rice
  • 3.5 cups boiling water

Seasonings

  • Salt and pepper

Instructions 

  • Season the chicken with salt and pepper, then brown both sides in a hot oven-safe pan. Remove and set aside.
  • In the same pan, cook the onion, carrot, celery, and garlic until fragrant and tender.
  • Add butter, lemon slices, and stock powder. Stir, then add rice to coat in buttery flavor.
  • Nestle the chicken on top, pour boiling water, cover, and bake at 200°C for 20 minutes.

Notes

Ensure the chicken is cooked through before serving. Feel free to add herbs for extra flavor.
