A quick and flavorful chicken salad packed with sun-dried tomatoes, olives, and fresh spinach, perfect for a light lunch or dinner.
Ingredients

cooked chicken (chopped or shredded)
Vegetables & Olives

sun-dried tomatoes, chopped

red onion, chopped

baby spinach, chopped

kalamata olives, chopped
Dressing & Seasonings

extra virgin olive oil

fresh lemon juice
(I use 4 Tbsp)

garlic powder

Instructions
Shred or chop the cooked chicken and finely chop sun-dried tomatoes, red onion, olives, and spinach. Combine in a large bowl.
Add olive oil, lemon juice, garlic powder, salt, and pepper. Toss to combine and taste, adjusting seasonings as needed.
Serve immediately or chill for later. For creaminess, add Greek yogurt if desired.
Notes
For a more moist salad, add extra olive oil or lemon juice. For creaminess, mix in Greek yogurt.
