A quick and flavorful chicken salad packed with sun-dried tomatoes, olives, and fresh spinach, perfect for a light lunch or dinner.

Ingredients

Protein

  • 4 cups cooked chicken (chopped or shredded)

Vegetables & Olives

  • ¼ cup sun-dried tomatoes, chopped
  • ¼ cup red onion, chopped
  • 1 cup baby spinach, chopped
  • ¼ cup kalamata olives, chopped

Dressing & Seasonings

  • 2 Tbsp extra virgin olive oil
  • 4 Tbsp fresh lemon juice (I use 4 Tbsp)
  • ½ tsp garlic powder
  • ¼ tsp salt (more to taste)
  • ¼ tsp black pepper

Instructions 

  • Shred or chop the cooked chicken and finely chop sun-dried tomatoes, red onion, olives, and spinach. Combine in a large bowl.
  • Add olive oil, lemon juice, garlic powder, salt, and pepper. Toss to combine and taste, adjusting seasonings as needed.
  • Serve immediately or chill for later. For creaminess, add Greek yogurt if desired.

Notes

For a more moist salad, add extra olive oil or lemon juice. For creaminess, mix in Greek yogurt.
