A delicious and creamy pasta dish featuring tender chicken, sun-dried tomatoes, and fresh spinach, perfect for a quick weeknight dinner.

Ingredients

  • 300 g pasta shapes (rigatoni)
  • 2 tablespoons olive oil
  • 3 pieces chicken breasts (approx. 525g)
  • 0.25 teaspoon salt
  • 160 g sun-dried tomatoes (1 cup)
  • 1 red bell pepper red bell pepper (de-seeded and sliced)
  • 2 tablespoons tomato puree
  • 330 ml chicken stock (1 1/3 cups)
  • 1 onion onion (peeled and sliced)
  • 2 cloves garlic (peeled and minced)
  • 0.13 teaspoon salt and pepper
  • 90 ml double heavy cream (1/3 cup)
  • 50 g parmesan cheese (grated)
  • 90 g fresh baby spinach (3 packed cups)

Instructions 

  • Cook pasta in boiling salted water until tender, then drain.
  • Heat oil and cook chicken until golden, then add onion and cook until soft.
  • Add garlic, sun-dried tomatoes, red pepper, and tomato puree; cook 2 minutes.
  • Pour in chicken stock, season, and simmer 5 minutes.
  • Stir in cooked pasta, cream, Parmesan, and spinach; cook until spinach wilts. Garnish with parsley.

Notes

For extra flavor, add herbs like oregano or thyme during cooking.
