Instructions
Cook pasta in boiling salted water until tender, then drain.
Heat oil and cook chicken until golden, then add onion and cook until soft.
Add garlic, sun-dried tomatoes, red pepper, and tomato puree; cook 2 minutes.
Pour in chicken stock, season, and simmer 5 minutes.
Stir in cooked pasta, cream, Parmesan, and spinach; cook until spinach wilts. Garnish with parsley.
