Instructions
Preheat oven to 375°F (190°C).
Cut the tops off the peppers and remove seeds.
Cook ground turkey with diced onion and garlic until browned. Mix in rice, beans, tomatoes, and spices.
Stuff peppers with the mixture, top with shredded cheese, and bake for 30 minutes.
Garnish with cilantro if desired and serve hot.
