Ingredients

Bell Peppers

  • 4 large bell peppers (any color)

Ground Turkey

  • 1 pound ground turkey

Cooked Brown Rice

  • 1 cup cooked brown rice (or quinoa)

Onion

  • 1 small small onion, diced

Garlic

  • 2 cloves cloves garlic, minced

Black Beans

  • 1 can (15 ounces) black beans, drained and rinsed

Diced Tomatoes

  • 1 can (14.5 ounces) diced tomatoes, with juices

Cumin

  • 1 teaspoon cumin

Chili Powder

  • 1 teaspoon chili powder

Paprika

  • ½ teaspoon paprika

Salt and Pepper

Shredded Cheese

  • 1 cup shredded cheese (cheddar or mozzarella)

Cilantro

  • for garnish (optional) Fresh cilantro, for garnish

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cut the tops off the peppers and remove seeds.
  • Cook ground turkey with diced onion and garlic until browned. Mix in rice, beans, tomatoes, and spices.
  • Stuff peppers with the mixture, top with shredded cheese, and bake for 30 minutes.
  • Garnish with cilantro if desired and serve hot.

Notes

For a vegetarian version, substitute ground turkey with plant-based protein or additional beans.
