Instructions
Soak noodles in hot water for 10–12 minutes, then drain.
Whisk together peanut butter, soy sauce, sugar, chili sauce, ginger, garlic, lime juice, and coconut milk to make the sauce.
Cook chicken in oil until browned and cooked through, then set aside.
Stir-fry vegetables in pan, then add chicken and sauce, tossing to coat.
Add noodles, toss to combine, and finish with lime juice. Garnish and serve.
Notes
Adjust spice level with chili sauce and add more coconut milk if needed for creaminess.
