A quick and flavorful homemade teriyaki chicken recipe perfect for weeknights.

Ingredients

Protein

  • 2 pieces chicken breasts (cut into 1" pieces)
  • 1/2 teaspoon garlic powder
  • Pepper to taste pepper
  • 3 tablespoons cornstarch
  • 3 tablespoons olive oil (divided)
  • Garnish (optional): chopped scallions & sesame seeds garnish (optional)
  • 1/4 cup brown sugar (packed)
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic (minced)
  • 3 tablespoons mirin (see note)
  • 2 tablespoons soy sauce
  • 1 teaspoon rice vinegar (or apple cider vinegar)
  • 1/2 cup water
  • 1 tablespoon cornstarch

Instructions 

  • Whisk sauce ingredients in a small bowl.
  • Coat chicken pieces with garlic powder, pepper, and cornstarch.
  • Cook chicken in oil over medium-high heat in 2 batches until browned and cooked through, then set aside.
  • Return chicken to pan, add sauce, and cook until thickened. Serve over rice, garnished with scallions and sesame seeds.

Notes

Adjust cooking time for desired doneness and sauce thickness.
