A quick and flavorful Thai-inspired dish combining tender chicken, vibrant vegetables, and a spicy, tangy sauce.

smooth peanut butter

Noodles and vegetables

flat rice noodles

canola oil, divided

chicken breast, sliced into thin strips

red bell pepper
halved and thinly sliced

carrots, shredded or julienned

garlic, minced

egg
beaten

green onion

unsalted peanuts, roughly chopped

cilantro leaves, chopped
Instructions
Cook rice noodles according to package, rinse in cold water, drain, and toss with 1 tbsp canola oil. Set aside.
Whisk all sauce ingredients in a bowl and set aside.
Heat 1 tbsp canola oil in a skillet, cook chicken 3-4 minutes, then transfer to a plate.
In the same skillet, sauté bell peppers 1 min, add carrots and garlic, cook 1 min. Add beaten egg, scramble until just set.
Add sauce and noodles, toss and cook 1-2 min. Stir in chicken, green onion, peanuts, heat through. Garnish with cilantro and serve.
Notes
You can adjust spiciness by adding more Sriracha or lime for tang.
