Ingredients

Protein

  • 1 lb boneless, skinless chicken breast
  • 1 cup brown rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 each avocado, diced
  • 0.5 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning
  • to taste Salt and pepper

Garnish

  • to taste Fresh cilantro for garnish

Instructions 

  • Cook the brown rice according to package instructions.
  • Heat olive oil in a skillet, season chicken with taco seasoning, salt, and pepper, then cook until fully cooked, about 6-7 minutes per side.
  • Let the chicken rest, then slice into strips.
  • Layer cooked rice, black beans, corn, diced tomatoes, and sliced chicken in bowls.
  • Top with diced avocado, Greek yogurt, and garnish with cilantro. Serve immediately.

Notes

For extra flavor, add a squeeze of lime or hot sauce.
