A simple and flavorful baked chicken recipe infused with honey, lemon, and fresh thyme, perfect for a quick weeknight dinner.

Ingredients

Protein

  • 1 pound boneless, skinless chicken breasts
  • 4-5 sprigs fresh thyme
  • 3 tablespoons fresh lemon juice (from 1 large lemon)
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • Optional pinch of red pepper flakes
  • Optional 1 tablespoon butter
  • Optional thin lemon slices for garnish

Instructions 

  • Preheat oven to 400°F (200°C). Whisk honey, lemon juice, olive oil, and garlic until combined.
  • Pat chicken dry, season with salt and black pepper. Place in a baking dish.
  • Pour glaze over chicken, tuck thyme sprigs around and on top. Add lemon slices if desired.
  • Bake for 20-25 minutes until internal temperature reaches 165°F (74°C). Halfway, spoon glaze or flip chicken.
  • Rest for 5 minutes, then serve with pan juices and lemon slices for garnish.

Notes

For extra flavor, add a pinch of red pepper flakes or a pat of butter before baking.
