Instructions
Preheat oven to 400°F (200°C).
Mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a large bowl. Coat the chicken with the marinade.
Place the chicken in a roasting pan and surround with potato chunks. Pour remaining marinade over potatoes.
Roast in the oven for about 1 hour and 15 minutes, until internal temperature reaches 165°F (75°C).
Let the chicken rest for 10 minutes, then carve. Garnish with fresh parsley and serve.
Notes
For extra flavor, marinate the chicken overnight.
