A quick and flavorful pasta dish featuring tender chicken, fresh spinach, and a creamy Parmesan sauce.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts (cut into bite-sized pieces)

Pasta

  • 2 cups penne pasta (whole wheat for extra health!)

Oils and Aromatics

  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)

Vegetables

  • 2 cups fresh spinach

Dairy & Cheese

  • 1 cup low-fat milk or unsweetened almond milk
  • 1/2 cup low-fat cream cheese
  • 1/2 cup grated Parmesan cheese

Seasonings

  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon Italian seasoning

Garnish & Optional

  • Fresh parsley, chopped (for garnish)
  • Optional Red pepper flakes (for a kick)

Instructions 

  • Cook pasta until al dente and set aside.
  • Sauté chicken in olive oil until golden and cooked through.
  • Add garlic and cook until fragrant.
  • Reduce heat, add cream cheese and milk, stirring until smooth.
  • Mix in spinach and cooked pasta, then stir in Parmesan cheese. Garnish with parsley and serve.

Notes

For extra flavor, add red pepper flakes during cooking.
