A flavorful and creamy Cajun chicken pasta dish that's quick to prepare and perfect for weeknight dinners.

Ingredients

Protein

  • 2 large boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil

Pasta

  • 12 ounces fettuccine or pasta of choice
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Cajun seasoning (adjust to taste)
  • ½ teaspoon paprika
  • ½ teaspoon onion powder
  • 1 cup shredded Parmesan cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach (optional) (for extra greens)

Seasonings

  • to taste Salt and black pepper
  • for garnish Fresh parsley, chopped

Instructions 

  • Boil salted water, cook pasta until al dente, then drain and set aside.
  • Season chicken with Cajun seasoning, cook in olive oil until golden and internal temp reaches 165°F, then rest and slice into strips.
  • Melt butter in skillet, sauté garlic, add heavy cream and chicken broth, season with Cajun, paprika, onion powder; simmer 3-4 mins.
  • Reduce heat, stir in Parmesan until melted, add cherry tomatoes and spinach, cook 2 mins.
  • Add cooked pasta to sauce, loosen with reserved pasta water if needed, top with sliced chicken and parsley, then serve.

Notes

Adjust Cajun seasoning to taste for spiciness.
