This flavorful chicken and vegetable rice skillet is quick to prepare and packed with vibrant flavors, making it a perfect weeknight dinner.

Ingredients

Protein

  • 1 lb boneless, skinless chicken thighs or breasts (Choose for quick cooking)
  • 1 cup long-grain white rice (Rinsed)
  • 2 cups chicken broth (Use low sodium)
  • 1 cup bell peppers (Colorful and sweet)
  • 1 medium onion (Finely chopped)
  • 3 cloves garlic (Minced)
  • 1 cup carrots (Diced)
  • 1 cup frozen peas or green beans (Added at the end)
  • 1 tbsp olive oil (For sautéing)
  • 1 tbsp smoked paprika (Adds smoky warmth)
  • 1 tsp dried thyme or Italian herbs
  • 1 tsp salt (To taste)
  • 1 tsp black pepper (To taste)
  • 2 tbsp fresh parsley or cilantro (Chopped, optional)

Instructions 

  • Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned, about 5 minutes.
  • Add chopped onion, garlic, and bell peppers; sauté until fragrant and vegetables are tender, about 3-4 minutes.
  • Stir in smoked paprika, thyme, salt, and pepper. Add rice and chicken broth; bring to a boil.
  • Reduce heat, cover, and simmer for 15 minutes. Add carrots and frozen peas; cook until rice is tender and vegetables are heated through.
  • Garnish with chopped parsley or cilantro before serving.

Notes

For extra flavor, add a squeeze of lemon or a dash of hot sauce.
